Hema’s Carrot Cupcakes!

Hema’s carrot cupcakes are quick, easy and as healthy as a delicious cake is ever going to be! Ingredients:

For the cake:

All-purpose flour (we use spelt) – 1 ½ cups
Baking powder – 1 teaspoon
Bicarbonate of soda – 1 teaspoon
Cinnamon powder – 1 teaspoon
Ginger powder — 1 teaspoon
Nutmeg powder – ¼ teaspoon
Salt – ¼ teaspoon
Butter / Oil – ¼ cup
Sugar (we use unrefined caster or demerara sugar) – ¾ cup
Milk – ¼ cup
Water – ¼ cup
Pure vanilla extract – 1 teaspoon (optional)
Carrots – 1 cup, grated
Raisins, nuts, seeds (optional)

For the butter icing:

100g butter
200g icing sugar
Drop of milk
1 tsp orange essence

Method:

For the cake

Preheat the oven at 180°c
Grate the carrots and set aside
In a bowl mix flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger
Melt the butter in a pan on a low – medium heat
Once butter is melted add sugar, milk, water and vanilla extract and mix up
Add wet ingredients to dry ingredients and fold together gently
Fold in grated carrots (and any nuts, seeds or raisins if you choose to add them)
Spoon mixture into a greased or papered cupcake tray
Put tray in oven and leave to cook for 20-25 mins (until cakes are risen and golden brown)
Remove cakes from oven and prick with a knife or wooden pick. If it comes out clean then the cakes are cooked through
Leave to cool for 10 mins then remove from tray and leave on a cooling rack for 30-60mins

For the butter icing:

Cream together butter and sugar
Add drop of milk and orange essence and whisk up

Once you have added the icing to the cakes you can then sprinkle on some chopped walnuts for added decor and crunch!
